Hoboken will be continuing its recent trend of drawing eateries with multiple locations as a Manhattan chain with a focus on sustainability is coming to a sizable storefront.
Just Salad, a New York City-based business with 40 locations, is officially opening at 114 Washington Street. The brand was founded in 2006 by childhood friends Nick Kenner and Rob Crespi and opened their first location at 320 Park Avenue during an era when there was a shortage of healthy yet affordable food options in the neighborhood.
The company has since expanded to about 40 locations and has existing New Jersey spots inside Newport’s 525 Washington Boulevard property and within Totowa Village on Union Boulevard. A representative for Just Salad confirmed to Jersey Digs that they have signed a lease for 1,625-square feet of space at the former Banco Popular property.
“We look forward to bringing Just Salad’s mission of everyday health and everyday sustainability to Hoboken,” the company said through a statement.
Just Salad’s slogan is “eat with purpose” and the company aims to be environmentally conscious. All their restaurants feature a reusable bowl program for guests that eliminates the need for over 75,000 pounds of plastic every year, and the company recently enacted a “zero waste” vision that aims to send nothing to landfills by the end of this year.
Besides diverse salads, the restaurant’s menu consists of a variety of wraps, warm bowls, avocado toast, soups, and smoothies. In addition to dishes with meat options, Just Salad offers several 100% plant-based substitutes and sells their house-made dressings by the bottle.
While a timeline for launching their latest location remains fluid, Just Salad says their Hoboken restaurant is scheduled to open later this year. The chain is the latest to plan a Hoboken spot over the last year, as Sticky’s Finger Joint, Mighty Quinn’s, Bluemercury, The Whale Tea, Framebridge, and a potential Nike Factory store are all coming soon.
